Honey processing has become popular over the last few years. Coffee cherries are de-pulped, but much of the fruit is left on the bean. The remnants ferment into the bean. Mill operators carefully dry and rotate the beans so there isn’t any chance of rot that could ruin the lot.

Don’t let the name fool you, honey gets it’s name from the sticky mucilage left on the beans, not from a honey flavor. What it does do is accentuate sweetness and somewhat mute acidity (compared to fully washed) for a smooth cup. Also known as semi-washed, pulped natural. It’s a way to increase the range of outcomes from a single region. It takes nice Costa Rica coffee and plumps the fruitiness without going as far as natural process like you might find in an Ethiopian coffee.

The honey process results in a profile of sweetness, body and some citrusy overtones. In this lot, look for medium body, good acidity with hints of nut.

For the last five years, grower Cristian Alvarez has produced 100% caturra microlots with his father on land in the mountains of Tarrazu, Costa Rica that has been part of their family for four generations. His mature 15 year old caturra trees were planted on land that has been part of his family for five generations. Dubbed “El Rodeo” because this plot was where they used to keep the horses.

Cristian transports his coffee to be processed at the nearby Palmichal Micro-Mill, located between Costa Rica’s Central Valley and Tarrazu regions. The micro mill is state-of-the-art. it includes patios for sun-drying, elevated beds for more rigorous drying, a greenhouse and specially designed drum driers.
