Ethiopia Sidamo GR4 Natural Guji

These full natural processed beans are dried on raised beds and yield a berry/blueberry fruit flavor, chocolate, and chewy body. More of a rustic Harrar type berry than pure blueberry. You'll find a fruity, rich cup with sweet subtle flavors and a bright finish.

If you've been hankering after the berry notes that were so prevalent in Harrar awhile back, they're hiding here. Here they are, big, bold, and juicy in this natural processed coffee. Open the bag and it'll be the first thing you smell. In a city roast, next to the beautiful round body and the heavy berry flavors, you'll get a little lemony sparkle. Take it just into 2nd crack at full city plus, and the roasty flavors will accent some bittersweet chocolate flavors.

Ethiopia Sidamo 4 Natural Guji GrainPro is sourced from the Guji Coffee Export PLC, which is owned and operated by Grima Edema who has more than 20 years of experience exporting coffee from the Kercha district in the Oromia region of Ethiopia. The focus on selection of only ripe cherries that are washed, meticulously dried, and milled in a vertically integrated operation gives Grima full control of the processing up to the final export stage, resulting in an exceptionally clean and sweet cup profile.

This is one of the best origins for natural process southern Ethiopian coffee. The combination of very high altitude and iron-rich, acidic soil creates the ideal growing situation to produce the bright, berry to floral profile. The cherries are turned every 2 to 3 hours in the first few days to avoid over-fermentation and mold growth. Depending on weather, 4 to 6 weeks later the beans are de-hulled and transported in parchment to Addis Ababa, the capital of Ethiopia, to be milled and bagged prior to export.

One of the great things about Ethiopian coffees is the complete mix of varietals. It is estimated that somewhere between six thousand and ten thousand varietals exist naturally in these highlands, the origin of coffee. The cross pollination of genetics is totally amazing. - Jason at Cafe Imports.

You can find the growing region on a map by looking in South Eastern Ethiopia, not far from the Kenya Somalia borders.

Roast to second crack, quickly, for a sparkling fruity cup. Give it a few days rest before brewing.
